Chimichurri Sauce

  • 1 bundle parsley, washed, dried, and chopped fine
  • 1 T. chopped white onion
  • 2 fresh cloves garlic
  • ¼ C. olive oil
  • 2 T. red wine vinegar
  • 1 tsp. dried oregano (or oregano essential oil using “toothpick method”
  • 1 dried red chili pepper or jalapeno
  • 1 tsp. sea salt
  • 1 drop Young Living Vitality Black Pepper

Pulse all ingredients in food processor. Serve as dip with plantain chips or spooned over meat or vegetables. It makes a great dipping sauce for paleo flat bread too!
