Keto Potato Salad

This is seriously the best “potato” salad ever! I could eat it every day for lunch and never get tired of it. And the eggs give protein and lots of “good fat.” So it can be a side or a stand-alone lunch!

And my teen son STILL doesn’t know it doesn’t have potatoes in it, so PLEASE don’t tell him!! 😂
 
Keto “Potato” Salad
· 1 lb cauliflower florets (fresh or frozen)
· 4 Hard Boiled Eggs (chopped)
· 1/2 Cup Red Onion (chopped)
· 1/2 Cup Celery (chopped)
· 1/2 Cup Bell Pepper (chopped)
· ¼ cup chopped all natural dill pickles (I like to add extra – and check your ingredients for sugar or dies)
· 1 Cup Mayonnaise (Use homemade or an avocado based mayo)
· 4 Tbsp Mustard
· Salt and Pepper to taste
· 2 drops Young Living Dill Vitality essential Oil
2 drop Young Living Vitality Black Pepper essential oil

Directions:
· Steam or boil cauliflower in salted water for 5-7 minutes until just tender
· Drain and cool
· Roughly chop into bite-sized pieces
· If you are using dill essential oil, add the drops to the mayo or the mustard and stir well
· Mix all ingredients together in a large bowl
· Refrigerate for at least 4 hours
Garnish with a little dried dill (optional)
